Characteristic: Pale gold, thick runny to naturally set/semi-crystallised. Raw and course filtered.
(Please note as our honey is pure, unheated and unadulterated it is likely to set over time into a semi-solid or solid state. This is sign of purity, quality and a good indicator that it has retained its natural enzymes, minerals, beeswax and pollens.
Our Spring Honey is more solid set when compared to our Summer Honey. This is due to the pollen and nectar sources collected by our bees at this time of year. Should you prefer your honey more runny simply gently heat your honey jar in a bain maire to dissolve.)
Flavour: Sweet, fragrant, fresh, floral (think blackthorn/hawthorn) & evergreen.
Pollen & Nectar sources: Collected from the English countryside between March to June. Snowdrops, crocuses, oilseed rape, sycamore, elm, primroses, lungwort, bugle, early fruit trees such as cherry & plum, blackthorn, hawthorn, etc.
Country of Origin: 100% British. Sustainably collected from our hives in Leicestershire, Rutland and Lincolnshire.
